Black Bean Burger

Blackbean Burger

Yields: 4-8 Burgers    (Serve with Jarred Fresh Salsa Fresca)

Ingredients:

2-3 (15 oz. cans) black beans

1 small red onion

1 each small red & green bell pepper

3 large cloves garlic

¼ cup freshly chopped cilantro

1 tsp cumin

1 tbsp chili powder

1 cup whole wheat bread crumbs

1 ripe avocado

Chipotle Mayo (whisk all ingredients together)

1 cup mayonnaise (Vegan mayo can be used)

1 tbsp adobo sauce

2 chipotle chilies in adobo sauce

Side Salad:

Shredded Red Cabbage

Fresh lime & Olive Oil

Salt & Pepper to taste

Directions:

Finely chop garlic, onion, bell pepper and cilantro and set aside. Rinse and drain black beans well. Place beans in a large mixing bowl and mash well with a fork and or hands. Beat 1 egg and add it and the chopped vegetables, chili powder, cumin, ⅔ bread crumbs, and mix well. Wet hands & form into  patties 4-8 depending on size you desire, then coat gently each side with the remaining bread crumbs. Heat large skillet over medium-high heat. Add oil to pan; swirl to coat. Cook patties 3-5 minutes on each side.  While burgers are cooking take the avocado and mash it to consistency you desire (if not eating right away, squeeze a little lime juice, salt & stir to keep from turning brown).Spread chipotle mayo on both top/bottom of roll, place burger on roll, top with mashed avocado and spoon some of Jarred Fresh Salsa Fresca and then top with roll…You can also enjoy without the bun, just use the cabbage salad as a bed and place burger on top…
